Banana Chutney
Chutney is a condiment of Indian origin with a sweet-sour flavour, which results from the mixture of ingredients. It is made when vinegar, spices, sugar and fruit are cooked together very slowly. Chutney is usually served with curry, cold meats or even crisps (potato chips).
Ingredients
1) 3 lb. banana (firm) - sliced thinly
2) 1 lb. white sugar
3) 1.5 to 2 pints white vinegar
4) 1 tablespoon curry powder
5) 1 tablespoon ground cinnamon
6) 8 oz. sultanas or currants (picked and washed)
7) 3 teaspoons salt
Cooking Method
1) Using a pan, cook all ingredients for 10-15 minutes and close with lid
2) Then open lid and stir occasionally to evaporate the water until thick
3) Bottle while still hot.
